14-16 oz cherry tomatoes
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon ground pepper
1 shallot, finely diced
2 cloves of garlic, minced
a splash of 2023 Russian River Valley Chardonnay
fresh basil, finely chopped
Heat oil in a medium pan on medium-high heat.
Add whole tomatoes and let them sit undisturbed
for 1-2 minutes to blister the skins.
Turn the heat down to medium. Add the shallot, garlic, salt and pepper, and deglaze the pan with a splash of Gary Farrell 2023 Russian River Valley Chardonnay. Cook until shallot becomes translucent, stirring occasionally. Remove from heat and add in the basil. Serve over barbecued chicken or alongside grilled veggies!
Cheers!
