This wine has benefited greatly from the tremendous technological advancements built into our new facility. This fruit was gently conveyed on belts (rather than damaging screws) to a sorting table, where all imperfections were manually removed. After whole-cluster pressing, the juice was naturally settled prior to fermentation. Our intent throughout the winemaking process was to preserve and enhance varietal character with minimal oak and no malolactic intervention. This attentive yet passive winemaking style has preserved freshness while enhancing varietal flavor and aroma development.
